Xanthan Gum

Xanthan Gum is very versatile plant-based thickening and stabilizing agent and food additive with low dust and rapid hydration.  Xanthan Gum works as an emulsifier, encouraging liquids that normally don't like one another to mix.  It also works as thickener, increasing the viscosity of liquids and batters. Xanthan gum can also create a creamy texture in items like ice cream and salad dressings.  It is great to use in gluten free baking!
