Polysorbate 60 is a non-ionic, hydrophilic surfactant used to make oil-in-water emulsions. It is soluble in water
and insoluble in vegetable oils and mineral oils.
APPLICATIONS: Polysorbate 60 is often used as a very effective stabilzer and emulsifier in a wide range of food products and industrial applications and is especially effective at forming stable emulsions, especially when combined with sorbitan esters.
