Polysorbate 20 is a non-ionic, hydrophilic surfactant used to make oil-in-water emulsions. It is soluble in water
and insoluble in vegetable oils and mineral oils.
APPLICATIONS:Polysorbate 20 is often used as a very effective stabilzer and emulsifier in a wide range of food products as well as some commerical and industrial uses. It is often used as an effective way to form stable emulsions, especially when combined with sorbitan esters.
