Polysorbate 80 is a non-ionic, hydrophilic surfactant used to make oil-in-water emulsions. It assists to stabilize and emulsify.
Polysorbate 80 is often used as an effective stabilizer and emulsifier in a wide range of food products to improve texture, disperse colors and flavors. It is useful as an ingredient to help ice cream resist melting.
In commercial and industrial applications it is useful when stable emulstions are needed when blending unlike ingredients and chemicals together.
