Malic Acid is typically used to increase the acidity of food, adding sourness for example, and giving more flavor, as a flavoring substance, and color stabilizer. It is often blended with multiple food acids, sugars, and high intensity sweeteners and flavors to create unique taste profiles. Sometimes used in place of citric acid which is less sour. Use best practices when using for foods and flavors and food manufacturing.
Malic Acid is also used in wine making allowing dull flavors to come forward and aid in fermentation.
