Xanthan Gum is a versatile plant-based thickening and stabilizing agent, and food additive. It works as an emulsifier, encouraging liquids that normally don't like one another to mix as well as a thickener, increasing the viscosity of liquids and semi solids. Xanthan gum is used in all kinds of foods and beverages as a thickener (rheology modifier), to modify viscosity, help stabilize emulsions, and prevent settling of solids in beverages, and products like ice cream and salad dressings. In ice cream it helps prevent ice crystals from forming too.
Xanthan Gum is an excellent gluten-free substitute for gluten free baking when a thickener is needed. Perfect to use in smoothies, ice cream, sauces, salad dressings, bread, pasta, pancakes, cupcakes and cake. Also an emulsifier in sausage making.
Xanthan Gum is often a substitute for Guar Gum, Arabic Powder, Clear Jel, Tapioca Starch, and other thickeners
