Potassium citrate (also known as tripotassium citrate) is the potassium salt of citric acid — a white, odorless, hygroscopic crystalline powder with a mildly saline taste. It is highly soluble in water and functions as a pH buffer, acidity regulator, emulsifying salt, sequestrant, and potassium source across a wide range of food, beverage, pharmaceutical, and industrial applications
It is sometimes used to reduce sodium content in beverages, gelatin desserts, confections, jams, and jellies. See Federal Standards of Identity for processed cheese .
This product is very hygroscopic and must be protected during storage from exposure to high temperatures and relative humidities.
