What is Citric Acid

Citric Acid fine granular, is a widely used weak organic acid. Specifically, it is a 6-carbon containing tricarboxylic acid. Citric Acid was first isolated from lemon juice, and is  a natural component of many citrus fruits. It was first  crystallized from lemon juice by Scheele in 1784.

Citric acid, one of the top chemicals manufactured, by tonnage, was originally made just from lemon and other citrus juices. During the 1900s another method and process that was more suited to manufacturing was discovered. This new method also made citric more economical to make. The new method to commercially product it,surprisingly, comes from fermenting a strain of fungi called Aspergillus niger. The fungi , derived from different sources of carbohydrates, such as molasses and starch based media are fed a diet of sugar, and then as the sucrose is metabolized, citric acid is produced as a by-product. This method is much more economical than using citrus fruits and allows for citric acid powder to be produced on a much larger more economical scale.

It is now found in a wide array of foods and beverages and in many commercial and industrial processes and technical applications as well. In food, it is popular since it adds a ‘sour’ taste or “ZING” to products, especially candies and confectionaries. Because of the sour taste citric adds to foods and beverages it is often called “sour Salt.”

Around the home citric acid is used in cleaners to help get rid of soap scum and calcium deposits.
